SWEET & SOUR SHRIMPS – VERSION I

SERVINGS: 4 

INGREDIENTS:

  • SHRIMPS – 500gr
  • SLICED CHERRY TOMATOES – 500gr
  • SLICED CARROTS – 1 PC.
  • SLICED PINEAPPLE – 200gr (you can use canned)
  • SLICED RED & YELLOW BELL PEPPER – 150gr
  • QUARTERED ONIONS – 2 PCs. Medium Size
  • CHOPPED GARLIC – 3 cloves
  • TOMATO PASTE – 1 tsp.
  • GREEN ONION – 1 stalk
  • LEMON JUICE – 2 tbsp. (Add more if needed)
  • BROWN SUGAR – 2 tsp.
  • OYSTER SAUCE - 2 tbsp.
  • GROUND PEPPER – ¼ tsp.
  • GINGER POWDER – ¼ tsp.
  • EXTRAVIRGIN OLIVE OIL – 3 tbsp.

DIRECTIONS:

Heat a non-stick frying pan and saute onions, chopped garlic, sliced fresh cherry tomatoes, 1 tablespoon of oyster sauce and sweat until tomatoes are quite smashed. Add pineapple and carrots and simmer for 2 minutes. Add shrimps, ground pepper, ginger powder, 1 tablespoon of oyster sauce and keep simmering for additional 5 minutes or until shrimps are cooked. Add bell pepper and let soften for 1 minute, once done, add green onions for garnishing, mix and serve.
