CARBONARA PINOY STYLE

INGREDIENTS:

  • SPAGHETTI – 300gr.
  • CHICKEN STRIPS – 150gr.
  • COOKED HAM – 150gr.
  • CHOPPED PARSLEY – 1 tbsp.
  • DRIED PORCINI / MUSHROOM – 10gr.
  • BUTTERMILK CREAM / NESTLÉ CREAM – 400ml.
  • GREEN PEAS – 50gr.
  • FONTAL CHEESE / CHEDDAR CHEESE – 100gr.
  • CHICKEN POWDER – 1/2 SCOOP
  • BROTH CUBE – ½ PC. (Vegetable flavour)
  • CHOPPED GARLIC – 2 tbsp.
  • GROUND MIXED PEPPER SEEDS – ½ tsp.
  • EXTRAVIRGIN OLIVE OIL - 3 tbsp.
  • SALT FOR BOILING THE PASTA – 2 tsp.

DIRECTIONS:

Season the chicken with chicken powder and ground pepper.

To prepare the sauce for the spaghetti, heat a non-stick frying pan with olive oil, saute the chopped garlic, add the chicken and cook for 2min, add ham and after 2min add the cream, half piece of broth cube, adjust into low fire and simmer until the broth cube has melt. Add the ground pepper, green peas, chopped mushroom, chopped parsley and simmer until green peas are cooked. Add the cheese and stir until melt. In the meantime bring to a boil a large quantity of water with 2 tsp. of salt and cook the pasta “al dente”. Drain, add some scoop of cooking water of the pasta to the sauce if necessary. Mix the pasta within sauce for 2min over a slow heat and serve, top with some additional chopped parsley.

    I’ve been watching you since I got the interest on watching cooking video clips on youtube. I find you and Davide a very loving and generous couple by sharing your cooking experiences together with us. After how many months of watching your videos, I was able to try one of your recipe, yung CARBONARA PINOY STYLE coz its one of my favorite pasta… and my fiance was very appreciative kc masarap daw tlga… I love cooking and baking kc kaya it really inspires me watching your videos kc me and my fiance l0ves to cook..mas magaling nga lng syang magluto than me… hehehe pamper syado nya ako sa kitchen kaya nga were both “VERY HEALTHY” lol… I’m from Davao City nga pla… Gusto unta ko makipag amigo ninyo..kung ok lng..=) Naa na diay koy list sa other recipes na gusto nko itry..     Hello Peachy, I just came across your videos when i was searching you tube for the recipe of Pansit Malabon, i browsed and browsed and then went to visit your website and for me it was the Holy Grail of my kitchen life. Okay, three days after i discovered your site, I have tried your Leche Flan( first time ever that i dare to do this , I used to think you have to have a special technique to have a super creamy melt in your mouth leche flan but this proved me wrong), a blast, your buttered chicken—my two boys became your fan and me –looking like i stayed in the kitchen for hours. Last night was the corn chowder with quail eggs — my husband signed up, and now we are having your Pinoy style carbonara for dinner and i finished it less than 30 minutes, i just set my laptop over the kitchen counter next to me and hit play and pause and back and it’s like having a friend cooking with me.
