CASSAVA CAKE
INGREDIENTS:
- GRATED CASSAVA – 800gr
- CONDENSED MILK – 400gr (1 can)
- PINEAPPLE JUICE – 200ml
- COCOMILK – 400ml (1 can)
- EGG – 2 PCs.
- THINLY SLICED OR GRATED CHEESE – OPTIONAL
PROCEDURE:
In a medium-sized bowl mix grated cassava, half of the content of condensed milk can, pineapple juice, cocomilk and eggs, Preheat oven at 200°C and bake cassava mixture for 40min or until cassava is cooked, spread on the surface the remaining condensed milk or, as an option, cover surface with a layer of cheese and top with condensed milk, return cassava cake in the oven and cook until surface is golden. Chill in refrigerator for several hours before to serve.

hi peach! just wanna know if you need to squeeze out the cassava juice or did you just grate it? i got to try this soon, but wanna make sure if i still have to juice it out. thanks for sharing

Thanks very much for your prompt reply. Sorry, I haven’t opened my email yet when I posted the same questions in your ‘Teach Mo Ako’ forum. I am glad to get a quick reply from you. I would like to verify if the condensed milk can ‘mass’ unit is in gram? Or ‘volume’ unit is in ml? I don’t have a can at home right now to check but when I checked the milk in carton, the unit is in ml.
Thanks for sharing with us the size of baking pans Peachy used to pour the cassava mixture in. May I know if the recipe posted is good for one or two baking pans if I want my cake to be just 1 inch thick?

Hi Peachy! I tried this cassava cake recipe with the addition of pineapple juice. It works! The cake is soft – just like the type that they sell in the public markets in the Manila. I love those as a kid just because of its softness. I added macapuno strings instead of cheese in the cake and as a topping together with the condensed milk. I love it! Thank you for sharing “the secret”.
