BEEF with PINEAPPLE & GREEN BELL PEPPER

DIFFICULTY:

CALORIES PER SERVING: 240 kcal

INGREDIENTS:

  • BEEF – 800 gr
  • PINEAPPLE JUICE – 1 cup
  • GREEN BELL PEPPER – 1 cup
  • PINEAPPLE CHUNKS – 140 gr
  • GARLIC CLOVES – 4 PCs. (flaked)
  • SOY SAUCE – 2 tbsp
  • ONION – 2 PCs. (medium size)
  • GROUND BLACK PEPPER – 1/4 tsp.
  • GINGER POWDER – 1/2 tsp.
  • CORNSTARCH – 1 tsp.
  • SALT – 1/2 tsp.
  • EXTRA VIRGIN OLIVE OIL – 3 tbsp.

PROCEDURE:

  1. Heat the olive oil in a large pan and then add the onion and garlic.
  2. Once garlic is golden add the meat, soy sauce, ground black pepper, ginger powder and salt.
  3. Cook the beef for 15 minutes or until juice has reduced and then add the pineapple juice and chunks.
  4. After 10 minutes, add in the cornstarch (dissolved in a small amount of cold water) and simmer for 2 minutes.
  5. Mix in the bell pepper and serve.

BANANA CAKE

DIFFICULTY:

PREPARATION TIME: 35′

SERVINGS: 12

CALORIES PER SERVING: 360 kcal

INGREDIENTS:

  • BANANA – 4 PCs.
  • ALL PURPOSE FLOUR – 300 gr
  • ICING SUGAR – 150 gr
  • BUTTER – 150 gr (melted)
  • DARK CHOCOLATE BITS – 3/4 cup
  • FLAKED ALMONDS – 3/4 cup
  • CINNAMON POWDER – 1/4 tsp.
  • VANILLA EXTRACT – 1 tsp.
  • BAKING POWDER – 1 tsp.
  • YEAST – 1 tsp.
  • EGGS – 2 PCs.

PROCEDURE:

  1. In a large sized bowl, mix together the flour, yeast, baking powder, sugar and cinnamon powder.
  2. Add the butter and eggs and whisk thoroughly.
  3. Add in the bananas cut into chunks and whisk until desired smoothness.
  4. Add the chocolate bits, vanilla extract and almonds and mix
  5. Transfer the dough into a greased moulder.
  6. Bake for 25 minutes at 180°C (to determine if the cake is well cooked, a toothpick stocked into the cake must come out clean)

SHRIMP NOODLES WITH HOISIN SAUCE

Preparation time: 30′

Servings: 6

Calories per serving: 375 kcal

INGREDIENTS:

  • EGG NOODLE / PANCIT - 250 gr
  • SHRIMPS - 300 gr
  • SMOKED BACON – 200 gr
  • BEAN SPROUTS – 250 gr
  • MINCED GARLIC – 5 cloves
  • HOISIN SAUCE – 3 tbsp.
  • GROUND BLACK PEPPER – 1/8 tsp.
  • SLICED GREEN ONION – 1 cup
  • EXTRA VIRGIN OLIVE OIL - 1 tbsp.
  • WATER – 2 cups

PROCEDURE:

  1. Peel the shrimp leaving the last part of the tail and soak the shells in the 2 cups water.
  2. Heat a large pan or wok. Add the extra virgin olive oil and saute the garlic until slightly golden brown.
  3. Add the smoked bacon and stir constantly for about 3 minutes or until the garlic is golden.
  4. Add the shrimps and mix
  5. Pour in the water from the shells using a strainer to retain the shells.
  6. Add the hoisin sauce, ground black pepper and simmer until shrimps are cooked.
  7. Add the bean sprouts, noodle and mix constantly to cook evenly until noodles are done.
  8. Garnish with the green onion and serve.

FISH FILLET IN GINGER & GREEN ONION

 

GOOD FOR 4 PERSONS.

INGREDIENTS:

  • FISH FILLET - 4 PCs.
  • SLICED GINGER – 25gr.
  • SLICED GREEN ONIONS – 3 stalks
  • SALT – ½ tsp.
  • EXTRA VIRGIN OLIVE OIL – 3 tbsp.
  • A PINCH OF BLACK PEPPER POWDER

PROCEDURE:

Season the fish with salt.

Heat the large non-stick frying pan, add the extra virgin olive oil, saute the ginger then add the fish fillet, sprinkle some black pepper powder on both sides of the fish and adjust to medium fire, cover with lid, flip the fish once in a while until cooked. Add the green onions one minutes before serving.
