MAMA SITA’s SERIES – KARE-KARE
Preparation time: 20′ + cooking time of the meat.
SERVINGS: 4-6
INGREDIENTS:
- Mama Sita’s Peanut Sauce (Kare-Kare) Mix – 1 pouch
- Beef tripe – 250gr (cut into 1½” cubes)
- Beef brisket – 250gr (cut into 1½” cubes)
- Minced garlic – 1 tsp.
- Sliced onion – 1 piece (medium size)
- Pechay (chinese cabbage) – 100gr
- Sitaw (or Green beans) (cut into 2″ length) – 100gr
- Eggplant (sliced into ½” length and pan fried) – 100gr
- Cooking oil – 1 tbsp.
- Bagoong (shrimp paste)
DIRECTIONS:
- Boil beef tripe and brisket in a large quantity of water, lower the heat and simmer until meat is very tender, adding water if needed, leaving about 1 ½ cups broth.
- In a heavy saucepan, saute garlic and onion in oil, add meat, stir fry and pour-in Mama Sita’s Kare-Kare Mix dissolved in a cup of water and then add the remaining broth.
- Stir and simmer until sauce thickens and add eggplant and sitaw. Simmer for 3min, stirring occasionally.
- Add pechay (chinese cabbage) and simmer for 2min until vegetables are cooked. Serve hot with bagoong and rice.
Cooking Variation: Pressure cook 500gr oxtail in 3 cups (750 ml) of water for 45 min and then proceed to cooking procedures 2 as mentioned above.
BEEF KARE-KARE
GOOD FOR 6 PERSONS.
INGREDIENTS:
- BEEF – 1 kilo
- BEEF TRIPE – 500 gr.
- COSTE – 200 gr. (YOU CAN USE PECHAY)
- BAGUIO BEANS – 200 gr. (YOU CAN USE STRING BEANS)
- EGGPLANT – 400 gr.
- UNSWEETENED PEANUT BUTTER – 4 tbsp.
- BLACK PEPPER POWDER – 1/2 tsp.
- MAMA SITA’S KARE-KARE MIX – 1 pack or similar
- BROTH CUBES – 3 PCS. (VEGETABLE FLAVOR)
- ONION – 1 PC. (MEDIUM SIZE)
- CHOPPED GARLIC – 2 cloves
- OLIVE OIL – 2 tbsp.
- WATER
- GINGER POWDER – 2 tsp. (FOR THE TRIPE)
PROCEDURE:
Boil the tripe in a large pot for 30-40 minutes add the ginger powder to remove the unwanted smell.
After boiling the tripe, heat the olive oil on high heat, once hot sauteed the onions and garlic. Add the beef, one piece of broth cube, black pepper powder, water and bring to boil until the meat is tender, usually it takes 1 1/2 hour. After 10 minutes of boiling, skim-off the foam from the boiling meat. Add the tripe after 40minutes before the beef is totally tender, after 15 minutes add peanut butter, 1 piece of broth cube, stir and another 15 minutes dissolve MAMA SITA’S KARE-KARE MIX in 50 ml of water, mix within the boiling beef, add the vegetables, last piece of broth cube, simmer until vegetables are cook and serve with shrimp paste on the side.
