MEATLOAF
GOOD FOR 4 PERSONS.
INGREDIENTS:
- MINCED PORK – 500gr
- CHOPPED CARROTS – 100gr
- CHOPPED CELERY – 50gr
- DRIED CRANBERRIES – 25gr (you can also use dried raisins)
- COOKED HAM – 250gr
- SALT – 2 teaspoons
- GARLIC POWDER – 1/4 teaspoon
- BLACK PEPPER POWDER – 1/4 teaspoon
- PARMESAN CHEESE – 3 tablespoons
PROCEDURES:
- Preheat oven at 180°C. Not that much hot so that the meatloaf will be cook finely.
- Prepare your baking pan and put enough parchment paper that will suit your baking pan.
- Before to put your meat you may prepare everything first just simply mixing everything on a mixing bowl where there is the MINCED PORK, then you may add the CHOPPED CARROTS, CHOPPED CELERY, DRIED CRANBERRIES, GARLIC POWDER, BLACK PEPPER POWDER, PARMESAN CHEESE and SALT. Then mix everything using your clean hand.
- After mixing is done. Place your parchment paper in the table or in a wide plate and put some half portion of the meat. Spread it very well in a round shape and press it good to make it firm.
- Then next is you put in your parchment paper with the meat in your baking pan.
- Follow the 125grams of HAM.
- Then another layer of meat. Then another set of 125grams of HAM. Then final layer of meat and don’t forget to press it good to make it very firm.
- Once it’s ready you can now put it in the oven and cook it for at least 30-40minutes. Don’t overcook or else the meat will be very dry.
- After cooking is done MEATLOAF is now ready to serve.
Note: There maybe procedures that I was not able to explain very well, but I hope watching the video will help though I’m speaking TAGALOG. Just look on my actions.
PORK MENUDO PEACHY’s STYLE
GOOD FOR 8 PERSONS.
INGREDIENTS:
- PORK FILLET – 800gr. (Cut into cubes)
- PORK LIVER – 600gr. (Cut into cubes)
- WURSTEL – 200gr (or sausage, Purefoods Hotdogs, …)
- CARROTS – 200gr. (Cut into cubes)
- POTATOES – 400gr. (Cut into cubes)
- BELL PEPPER GREEN – 1 PC. MEDIUM SIZE (Cut into cubes)
- CHOPPED ONIONS – 1 Pc. MEDIUM SIZE
- CHOPPED GARLIC – 2 cloves
- FRESH CRUSHED TOMATOES – 700gr.
- OYSTER SAUCE – 5 tbsp. (Add more if needed)
- OLIVE OIL – 2 tbsp.
- BLACK PEPPER POWDER – 1 tsp.
PROCEDURE:
Heat a large pot with olive oil, saute the onions and the garlic until golden brown, add the pork, the fresh crushed tomatoes, the black pepper powder, the oyster sauce and simmer until meat is cooked.
Add the carrots and leave cook for 5min then add the potatoes, after 3min, add the pork liver, once cooked, add the wurstel, the bell pepper green and cover for 5min before to serve.

MEATBALLS in SWEET & SOUR SAUCE
- MINCED PORK- 300grams
- IODIZED SALT- 3teaspoons
- GARLIC POWDER- 2teaspoons
- BLACK PEPPER POWDER- 2teaspoons
INGREDIENTS FOR THE SWEET & SOUR SAUCE:
- TOMATO SAUCE- 250ml
- KETCHUP- 3tablespoons
- HP SAUCE- 3tablespoons
- SUGAR- 4tablespoons
- OYSTER SAUCE- 3tablespoons
- SLICED CARROT- 1piece
- DICED BELL PEPPER GREEN- 1/2only
- DICED PINEAPPLE- 2rings (the one in can)
- DICED ONIONS- 1/2 only
PROCEDURES:
First put all the spices on the meat such as the SALT, GARLIC POWDER and BLACK PEPPER POWDER. Then you mix everything very well. Leave it for a while making the sweet & sour sauce.
Now while leaving the meat that way, prepare the sauce. In a bowl mix everything, TOMATO SAUCE, HP SAUCE, OYSTER SAUCE, KETCHUP and the SUGAR. Mix them very well and place it on a small pot or frying pan and bring to boil. Once it starts to boil you add the sliced carrots, and wait a couple of minutes until it’s cook in a slow fire or else it will get dry quickly. After the carrots are cooked, add the SLICED BELL PEPPER GREEN, DICED ONIONS & SLICED OR DICED PINEAPPLE. Boil for couple of minutes and then it’s ready.
Now after you cook the sauce, you can start to make the meat balls and fry. Just enough it’s a bit brown and make sure it’s well fried. Warm your sauce in slow fire and add now the fried meatballs and just mix it up until the meatballs are very well coated by the sauce. Then MEATBALLS in SWEET & SOUR SAUCE is ready to serve.
PORK ADOBO PEACHY’s STYLE
This is my own version of cooking PORK ADOBO: My version has no vinegar because my husband doesn’t like it and no soy sauce because I’m using oyster sauce.
GOOD FOR 6 PERSONS.
INGREDIENTS:
- PORK SPARERIBS – 2 kl
- UNSWEETENED PINEAPPLE JUICE – 700ml
- OYSTER SAUCE – 7 tbsp.
- SLICED ONIONS – 1PC. MEDIUM SIZE
- SLICED GARLIC – 3 cloves
- JUICE OF A LEMON – 1PC.
- BAY LEAVES – 3 PCs.
- OLIVE OIL – 2 tbsp.
- MIX GROUND PEPPER SEEDS – 1 tsp.
- WATER – 200 ml
PROCEDURE:
Make hot the wok with olive oil. Sauteed the onions and garlic. Add the pork spareribs, mix ground peppers, oyster sauce, unsweetened pineapple juice, 1 glass of water, lemon juice and bring to boil more than 1 hour or until the meat is tender but after 40 minutes of boiling add the bay leaves and banana flowers. Check if the meat is already tender. Remove from the wok and serve.
