FIVE SPICES PORK SPARERIBS

INGREDIENTS:

  • PORK SPARERIBS – 1kg
  • BLACK PEPPER POWDER – ¼ tsp.
  • SALT – ½ tsp.
  • FLOUR – 3 tbsp.
  • GROUND MIXED PEPPER SEEDS – ¼ tsp.
  • GROUND DRIED CHILI – ½ tsp.
  • GROUND CORIANDER SEEDS – ¼ tsp.
  • SLICED GARLIC – 7 cloves
  • DRIED ROSEMARY – 1 tsp.
  • SOY SAUCE – 2 tbsp.
  • BROTH CUBE – ½ PC. (classic flavour)
  • OLIVE OIL / PEANUT OIL – 4 tbsp.
  • WARM WATER – 500ml

PROCEDURE:

  1. Season the pork spareribs with salt and pepper. Add the flour and mix well.
  2. Heat a frying pan and add the olive oil. Fry the pork spareribs until lightly golden brown on each side and then remove from the pan.
  3. Saute the garlic in the same pan, add the ground mixed pepper seeds, ground dried chili, rosemary and ground coriander.
  4. Place back the pork spareribs in the pan. Add the water, soy sauce, broth cube and lemon juice.
  5. Once boiling starts, adjust the heat to a medium, cover the pan and simmer for 50 minutes or until the meat is tender and the sauce thickens. Serve hot.

Tip: for a lower calories meal you can substitute pork with chicken (488 kcal) or beef (625 kcal)

SPICY PORK SPARERIBS

Preparation time: 1h 20′

SERVINGS: 4

INGREDIENTS:

  • PORK SPARERIBS – 1.4kg
  • ROSEMARY -1 tsp.
  • GARLIC POWDER -½ tsp.
  • GROUND PEPPER – ¼ tsp.
  • SOY SAUCE – 10 tsp.
  • CHILI OIL – 3 tsp.
  • SESAME OIL – 2 tsp.
  • TOASTED SESAME SEEDS – 2 tbsp.
  • PINEAPPLE JUICE – 400ml

DIRECTIONS

Marinate spareribs for 30min with soy sauce, ground pepper, rosemary, chili oil, sesame oil, sesame seeds, garlic powder and pineapple juice. Preheat oven at 200°C, cook pork for 20min and then flip spareribs. Keep cooking for additional 20min or until sauce thickened and surface of meat is nicely roasted.

BRAISED PORK SPARE RIBS

GOOD FOR 6 PERSONS.

INGREDIENTS:

  • PORK SPARE RIBS – 1.5kg.
  • FRESH ORANGE JUICE – 250ml.
  • WATER – 150ml.
  • OYSTER SAUCE – 5 tbsp.
  • CHOPPED GARLIC – 5 cloves
  • SLICED GREEN ONION – 3 stalk
  • GROUND PEPPER – ½ tsp.
  • EXTRAVIRGIN OLIVE OIL – 2 tbsp.
  • ROSEMARY – ½ tsp.

PROCEDURE:

Heat the extravirgin olive oil in a non-stick frying pan or pot. Saute the chopped garlic, add the pork spare ribs, the orange juice, the water, the oyster sauce, the ground pepper, the rosemary and simmer until sauce has thicken and meat is tender. Add the sliced green onions and serve.
